Cauliflower florets give these rarebit toasts great texture and the mascarpone adds a delicious creamy note. Add mustard for a punch and put the toasts under the grill until browned and bubbling for a quick and easy treat

- 4 tbsp mascarpone
- 100g strong cheddarfinely grated
- 2 tsp Dijon mustard
- 4 slices sourdough
- to serve green salad

Method
step 1
Trim the stalk off the cauliflower, break off the florets and chop them roughly. Cook in simmering water for 4 minutes and drain well.
step 2
Mix the mascarpone, cheddar and mustard to a stiff paste, and mix it with the cauliflower.
step 3
Toast the bread, pile on the cauliflower and grill until browned and bubbling. Serve with green salad if you like.
