  • 350g wholemeal fusilli
  • 250g tenderstem broccoli
    cut into bite-sized pieces
  • 2 cloves garlic
    crushed
  • 4 anchovies in olive oil
    chopped
  • a pinch chilli flakes
  • olive oil
  • grated parmesan
    to serve (optional)

Method

  • step 1

    Put all the ingredients except the parmesan in a wide, shallow pan with 4 tbsp olive oil, 1 tsp salt and 950ml water.

  • step 2

    Bring to a simmer and cook for 15 minutes, covered, stirring regularly, until the pasta is tender and the cooking liquid has become saucy.

  • step 3

    Serve with parmesan, if you like.

This was really good. I rarely cook one-pot recipes, and no one had commented on this one, but I had some tenderstem broccoli which needed eating so I decided to give it a go. Quickly prepared and good balance of flavours--I'll be making it again.
