Ingredients

  • 2 small heads cauliflower, cut into 2 cm slices
  • 6 cloves garlic, unpeeled but bruised
  • 4 tbsp olive oil
  • 100g parmesan (or vegetarian alternative), finely grated

Method

  • STEP 1

    Heat the oven to 200C/fan 180C/gas 6.

  • STEP 2

    Put the cauliflower slices in a bowl, add the garlic and olive oil, and gently toss.

  • STEP 3

    Tip onto 2 baking trays and season well. Roast for 20-25 minutes, turning now and again, until tender.

  • STEP 4

    Sprinkle over the parmesan then cook for another 10-15 minutes until crusted and golden.
