- 2 small heads cauliflowercut into 2 cm slices
- 6 cloves garlicunpeeled but bruised
- 4 tbsp olive oil
- 100g parmesan (or vegetarian alternative)finely grated

Method
step 1
Heat the oven to 200C/fan 180C/gas 6.
step 2
Put the cauliflower slices in a bowl, add the garlic and olive oil, and gently toss.

Tip onto 2 baking trays and season well. Roast for 20-25 minutes, turning now and again, until tender.
step 4
Sprinkle over the parmesan then cook for another 10-15 minutes until crusted and golden.
