  • 600g potatoes (waxy or all purpose)
    peeled and cut into cubes
  • oil
  • 2 tsp blackck mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp freshly ground black pepper
  • a small bunch coriander
    chopped
  • 1 lemon
    cut into wedges

Method

  • step 1

    Steam the potatoes until they’re tender (or boil and then thoroughly dry them).

  • step 2

    Heat a little oil in a non-stick frying pan and, when it’s hot, add the seeds and wait a moment until they start to pop. Quickly add the potatoes and stir them around. Stir and fry until they start to brown at the edges, then add the black pepper and a good pinch of salt. Keep stirring and frying until the potatoes are nicely browned. Stir through the coriander, tip into a bowl and serve as a side with the lemon to squeeze over.
