  • 100g cheddar
    grated
  • 1/2 small red onion
    finely chopped
  • 1/2 red chilli
    finely chopped
  • 1 egg
  • a handful coriander
    chopped
  • 4 slices small bloomer
    toasted
  • 1/2 avocado
    diced
  • 1/2 lime
    juiced
  • hot sauce
    to serve

Method

  • step 1

    Mix the cheddar, onion, chilli, egg and ¾ of the coriander.

  • step 2

    Spread over the toasted bread slices and grill until bubbling.

  • step 3

    Mix the avocado with the rest of the coriander, lime juice and a pinch of salt.

  • step 4

    Scatter over the toast and serve with hot sauce.
