Worcestershire sauce was allegedly created in the early 1800s by chemists Lea and Perrins, who left a botched concoction in a cellar for a few years. When they tried it again, they found it had become a delicious sauce, which is now the secret ingredient in recipes like a bloody mary and Welsh rarebit.

  • 250g mature cheddar
  • 1 tsp English mustard
  • 1 egg yolk
  • a couple of good dashes Worcestershire sauce
  • 1-2 tbsp Guinness
  • 8 slices sourdough or other crusty bread
